Woke up this morning wanting to try something different. I looked all over the internet (foodnetwork, chow, vegetarian times). For some reason, I either couldn’t find any, or I was missing a very important ingredient. So I decided to make my own. Hope you enjoy.
- 1/2 Mashed Banana
- 1 Pita Pocket/Flat bread
- 1 bunch of berries
- 1 large strawberry
- 1/4 cup spinach
- 1 bunch shredded cheese
- 2 pinches of cinnamon
- 1 pinch of brown sugar (or your desired sugar)
- 2 pinches of nutmeg
- 1 pinch of Italian seasoning
- 2 pinches of garlic and herb seasoning
- 1 large egg
- 1 tbsp of coconut oil
- 2 pinches of black pepper
STEP 1) Preheat oven to 450°
STEP 2) Combine coconut oil, 1 pinch of black pepper, 1 pinch of cinnamon, brown sugar, nutmeg, 1 pinch of Italian seasoning, and 1 pinch of garlic and herb seasoning. Then spread on darker end of pita-pocket and place on baking sheet.
STEP 3) Flip pita over (lighter side up). Top with mashed banana, strawberries, berries, cinnamon and nutmeg (in that order). Then top with spinach and the remainder of Italian and herb seasoning,
STEP 4) Bake for 5 minutes
STEP 5) While Pita is baking, prepare a small pan on the lowest temp. Add coconut oil to the pan (oil should not sizzle).
STEP 6) once oil melted, crack one egg into the pan (make sure yolk does not break) and cover.
STEP 7) Cook for 5 minutes or until egg white is cooked and egg yolk is still wet.
STEP 8) Place cooked egg on top of Pita, sprinkle with cheese and enjoy.
