This is probably one of my favorite… actually… this is my favorite muffin there is. I’ve got this recipe from my cooking teacher. I made this for thanksgiving and it was gone that day. My teacher made Pumpkin spice bars, I decided to turn it into muffins. 🙂
2 cups sugar
1 cup vegetable oil
1 can (16 oz) pumpkin
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/2 cup raisins
Cream Cheese Frosting
- 1 pkg (3 oz) cream cheese, softened
- 1/4 cup and 2 tablespoons butter
- 1 teaspoon vanilla
- 2 cups powdered sugar
Chopped nuts (walnuts are my favorite)
STEP 1) Heat oven to 350 degrees.
STEP 2) Grease muffin pan.
STEP 3) In a large bowl, beat eggs, sugar, oil and pumpkin.
STEP 4) Stir in flour, baking powder, cinnamon, baking soda, salt, ginger and cloves. Mix in Raisins.
STEP 5) Pour batter into muffin tin filling each to the top.
STEP 6) Bake for 25-30 minutes. Then cool.
STEP 7) While cooling, mix cream cheese, butter, and vanilla. Gradually beat in powdered sugar until smooth.
STEP 8) Frost muffins with cream cheese frosting. Then sprinkle with nuts.
